MASON CITY, IA – It’s a highly anticipated annual event in north Iowa and this year it’s celebrating a milestone.

It’s the 10th year of the Up in Smoke BBQ Bash and things are well underway in Mason City.

The Pittmasters have arrived, and the smokers are… well smoking.

This year’s Up in Smoke BBQ Bash is off and running.

New to this year’s event is a SPAM cook-off.

One of the major competitors is Shad Kirton also known as “Boy and His BBQ.”

He decided to try his hand in the SPAM cook off, but doesn’t have much experience working with the canned meat.

“Ah, no, I did a test run about a week ago and it’s the first time I’ve actually ever eaten SPAM so it’s been interesting.”

But it sounds to me like he’s got a pretty good handle on things.

“I’m going to break down the SPAM into a couple of different sizes and cook it a couple of different ways and make a hash and have a maple bourbon demi-glaze with it so kind of something different,”

If you’re not into SPAM you’ll have plenty of other choices, I decided to scope out the vendors earlier and unfortunately because most of the meat has to be slow cooked… nothing was ready but I still found something to taste test.

“That’s very good, it’s unique. I don’t think I’ve had anything like it.”

Greg and Marissa Ouverson are a father-daughter duo from Kansas City.

They’re here competing, vending and selling some delicious BBQ sauce.

“At the beginning it’s really flavorful then at the end there’s a little bit of a kick. There are a lot of spices in it,” says Marissa.
