Asparagus with prosciutto and almonds

Asparagus with Crispy Prosciutto and Almonds

All you need:

3 oz prosciutto (about 6 slices), sliced

4 teaspoons Select olive oil

2 pounds fresh asparagus

½ cup water

Black pepper, to taste

2 teaspoons grated lemon zest

1 (2-ounce) package sliced almonds (1/2 cups)

Shaved Parmesan cheese

All you do:

  1. In a skillet over medium heat, cook prosciutto until crispy (similar to cooking bacon, but with less grease). Once crispy, set aside to use for garnish.
  2. Heat olive oil in skillet and add asparagus. Sauté about 2 minutes over medium heat. Add water and cover (stir occasionally) for 4-8 minutes, or until asparagus is crisp-tender.  Add black pepper to taste and remove from heat.
  3. Place cooked asparagus on plate and garnish with lemon zest, cooked prosciutto, almonds and shaved parmesan.
