Grilled Peaches with Mascarpone Cream
All you need:
1/3 cup mascarpone cheese
3 Tablespoons nonfat plain Greek yogurt
2 teaspoons sugar
4 ripe but firm peaches, sliced
1 tablespoon canola oil
8 teaspoons honey
2 tablespoons sliced almonds, toasted
All you do:
Preheat grill to medium-high.
Combine mascarpone, yogurt and sugar. Refrigerate while you prepare the peaches.
Cut peaches into slices. Brush or toss with oil. Oil the grill rack. Grill peaches, turning as the slightly soften and begin to brown, about 2 minutes.
Divide peaches among 8 bowls. Dollop with about 1 tablespoon of the mascarpone mixture and drizzle with 1 teaspoon of honey. Top with toasted almonds and Enjoy!
