Festive Fall Vegetable Root Hash


All you need:
2 tbsp olive oil
2 Russet potatoes, cubed
2 sweet potatoes, cubed
2 carrots, cubed
2 parsnips, cubed
1 onion, diced
4 cloves of garlic, diced
¼ cup fresh cranberries
½ tsp orange peel
1 tsp fresh or dried sage
¼ tsp cumin
Salt and pepper, to taste

All you do:
1. Heat olive oil in a pan and add russet and sweet potatoes. Cook for 4 minutes.
2. Add carrots, parsnips, and onion to pan and cook for an additional 4 minutes.
3. Add garlic, cranberries, orange rind, sage, cumin and salt and pepper. Cook for 5 more minutes.
4. Season to taste and enjoy!
